So it’s officially Pancake Day in the UK. A day which I seem to get more excited about as I get older. Throughout the day I’ve been planning this recipe post. The one thing I seemed to forget was that after making said pancakes, they’d need eating. With the girlfriend not living locally (she’s in London, I’m in Oxford – wanted to clear that up as it may have seemed a bit Thai Bride-y), and a housemate out playing squash, it dawned on me that someone would need to step up to the plate…

…Enter Fat Lewis. The fat kid inside of me I try so hard to keep at bay. His chubby fingers couldn’t get to these pancakes quick enough, and he wasn’t disappointed, and I don’t think you will be either.

Chocolate Cinnamon Pancakes with Protein Fluff, Ice Cream, Almond Butter and Cacao Butter

Ingredients:

1 teaspoon virgin coconut oil

2 egg whites

1 scoop chocolate whey protein (I used Optimus Protein Whey)

1 teaspoon cinnamon

1 tablespoon Meridian Foods almond butter

1 tablespoon Whey Hey vanilla ice cream

1 teaspoon grated Raw Chocolate Company cacao butter

For the fluff:

1/2 cup frozen berries

25ml coconut milk or almond milk

30g whey protein powder

Method:

If you’ve not made protein fluff before, you’re in for a treat. It’s a recipe I’ve borrowed from the AMAZING Anna at Protein Pow. So, rather than me explain how to make it, I’ll leave it to the expert.

Once your fluff is suitably…erm…fluffed, move onto the pancakes.

Heat the coconut oil on a high heat until the pan is covered, and reduce to a medium heat.

Whisk together the egg whites, protein powder and cinnamon until you get a smooth batter.

Pour the mixture into the pan – either 3 small pancakes, or 1 beast of a pancake.

Turn after it starts to bubble (approximately 60 seconds).

Once both sides are cooked / browned, slide onto a plate.

The next step is just to have  fun with the toppings.

Chocolate Pancakes with Protein Fluff, Greek Yoghurt, Hazelnut Butter, Coconut and Berries

Ingredients: 

1 teaspoon coconut oil

2 egg whites

1 scoop whey protein powder

50g 0% Fat Total Greek Yoghurt

1 tablespoon Meridian Foods hazelnut butter

1 tablespoon desiccated coconut

1/2 cup frozen berries

Method:

Make the pancakes in the same way as above.

Go to town with your toppings!
